It is called cheese product obtained by maturation of the curd of milk and possessing certain characteristics from their origin or method of production.
Until the mid-nineteenth century the way the bread was developed craft, always considered highly nutritious and nutritional value. Then it became a massive industrial production and product.
Its main composition is casein and fats. The proportion of the latter are defined if fatty, semi-fat cheese or lean. They can be paperback or hardcover. The basic phases of all cheese making are the curdled milk; pressing the paste; salting; and maturation.
